Apple cider syrup is made with fresh apple cider, brown sugar, cloves, and cinnamon. Serve this simple fresh tasting pancake syrup over pancakes, waffles, or French toast for breakfast or brunch.
Not that many years ago, buying a bottle of pancake syrup was almost unheard of and there were few products available even if you wanted to do so. Most families made do with what they had around the house. I remember the days of using Karo syrup on pancakes and waffles.
The other alternative was to make your own syrup. Use this recipe as an alternative to maple syrup. Sometimes you run out of maple syrup and this one can quickly be made as a replacement.
One reason you may want to make your own syrup is the ability to keep control of the ingredients. Many commercial syrups add thickeners you cannot pronounce and other questionable ingredients. Making a homemade pancake or waffle syrup yourself can seem a bit daunting, but I encourage you to give it a try and see what you think. It is delicious.
The resulting product is meant to have a thinner consistency. It will thicken to some degree during cooking, but will not be like a commercial pancake syrup that uses other ingredients to make the product thicken.

Apple Cider Syrup
Ingredients
- 1-1/2 cups unsweetened apple cider
- 1/3 cup firmly packed brown sugar
- 10 whole cloves
- 1 stick 3 inch size cinnamon
Instructions
- Combine all ingredients in a small saucepan and bring the mixture to a full rolling boil (212 degrees Fahrenheit).
- After the syrup has reached a full boil, continue to cook, stirring constantly, for a 5-10 minutes or until slightly thickened.
- Remove all of the cloves and the cinnamon stick with a spoon.
- Let cool for 5-10 minutes and serve over your favorite pancake or waffle recipe for breakfast or brunch.
- Makes about 6 servings.
